Sushel is a traditional authentic Goan dry curry made from tender raw jackfruit. This raw jackfruit is referred to as kuvlo in Konkani. Sushel strikes a perfect balance of spicy, sweet and sour flavours.

Raw jackfruits are referred by different names like kadgi, kachha fanas, kovla phanas, kathal, halasina, gujje etc in various parts of India. Jackfruits are seasonal produce found in abundance along the southwestern coast of India during the summers. In Goa, jackfruits grow in heaps in private orchards during the months of April and May. You can also buy them in the local markets. Sushel is made from small sized raw jackfruits which are thin and long in shape.

Prepping the raw jackfruit

Novice cooks feel anxious or appalled at the thought of handling a jackfruit. But trust me, the process of cutting and coring the raw jackfruit is easy if done systematically. Raw jackfruits contain a lot of sticky substance or latex and the cutting task gets messy if not done right. The first step is to grease your hands and the blade of the knife to be used for cutting with oil. This prevents latex from sticking to your hands and the knife and makes cutting easy. Greasing will also make it easy to wash off any latex stuck to your hands or the knife.

Another trick to be followed is to use a piece of coconut husk while cutting a jackfruit. As you cut the jackfruit, you can use coconut husk to wipe off the latex. You can refer to our post and video on ‘how to cut a raw jackfruit’ for detail instructions.

Sushel is a very simple and easy to make dish. It hardly takes 15 minutes to prepare this seasonal speciality. Also this recipe uses basic ingredients found in every Goan home. This is a no onion no garlic recipe. In Goa, we serve sushel as a side dish with rice/dal or rice/fish curry.

Ingredients 

  • 100 gram raw jackfruit
  • 2 green chillies
  • ½ cup fresh grated coconut
  • ¼ cup grated jaggery
  • ½ Tsp mustard seeds
  • khada hing
  • marble size ball of tamarind
  • salt as per taste
  • coconut oil

Instructions

  • Add 1/2 cup water in a pressure cooker. Place a base or ring inside the cooker. Place the raw jackfruit pieces on a steamer tray. Steam the jackfruit for 2 – 3 whistles.
  • In a pan, heat some coconut oil. Add the khada hing. Fry for a minute.
  • Take a mixer jar and add the khada hing to it. Add coconut, jaggery, green chillies, tamarind and salt to it. Add 1/8 cup of water. Grind into a fine paste.
  • Add the steamed raw jackfruit to the contents of mixer jar. Grind everything a little coarsely. Keep aside.
  • Heat oil in a pan. Add the mustard seeds. Let the mustard seeds splutter.
  • Add the contents of mixer jar to the pan. Mix everything well. Fry for a minute and switch off the flame.
