Goan Style Dudhyache Bhart | Dudhi ka Bharta | Pumpkin Sabji | Lal Bhoplyachi Bhaji | Lal Bhopla Sabzi | Pumpkin Curry recipe with detail step by step instructions and a video. Dudhi Bharta is a simple Goan sabji made from boiled and mashed yellow pumpkin with basic seasoning. The Goan name ‘dudhyache bhart’ comes from the Konkani words ‘dudhi’ meaning pumpkin and ‘bhart’ meaning soft mashed vegetable.
Ingredients for Dudhi Bharta
The recipe for dudhi bharta is very quick and easy. For making this bharta, we use a slice of yellow pumpkin commonly found in Goan markets. The pumpkin is peeled, boiled and then mashed with a vegetable masher. To this we add basic ingredients like onion, coconut, green chillies, sugar and salt. Finely chopped onion and fresh grated coconut provide texture to the bharta. We also add a little tamarind water for a slightly sour flavour.
Making and Serving Bharta
It is best to mix all ingredients with mashed pumpkin just before serving. This is because we use raw onion and fresh coconut in this dish. Since onion and coconut are uncooked they will get spoilt in few hours in the hot humid Goan weather. So it is ideal to prepare this dish at the time of serving and then consume it entirely within a few hours of making it. This bharta is served as a side dish with rice/curry in Goan meals.

Ingredients
- 1 kg slice of pumpkin
- 2/3 cup fresh grated coconut
- 1 medium size onion – finely chopped
- 3 green Chillies – cut into small pieces
- marble size ball of tamarind
- 1/2 Tsp sugar
- salt as per taste
- 2 Tbsp drinking water
Instructions
- Mash and soak the tamarind in 2 Tbsp of water for 5 minutes. After 5 minutes, discard the tamarind pieces and retain the water.
- Cut the pumpkin slice into big cubes. Peel and discard the skin.
- Boil some water in a pan. Add the pumpkin pieces to it. Continue cooking till the pumpkin pieces are cooked.
- Poke the pumpkin pieces with a knife to see whether the knife easily passes though. This means the pumpkin is cooked.
- Switch off the flame and remove the pumpkin pieces from the water.
- Let the pumpkin cool down for a few minutes. Later, with the help of a masher, mash the pumpkin pieces.
- Add green chillies, onion, coconut, salt, sugar and tamarind water to the mashed pumpkin.
- Mix everything together. Pumpkin bharta is ready to be served.
Tips & Tricks
- Soak the tamarind in boiled water or water safe for drinking. This is because we will not be cooking or heating the pumpkin bharta.
- Since onion and coconut are raw, mix all ingredients for bharta just 5 – 10 minutes before serving.
- Also consume the bharta within few hours of preparing it, because otherwise the raw onion and coconut will get spoilt.
